LOIN "PLUMAS".
Iberian pig loin "plumas", fresh or frozen in 350 grams packages.
Obtained during the cutting of the loin. Its morphology is irregular, something broad and triangular. This part is particularly rich in intramuscular fat, which makes it tender and juicy. Its high concentration of monounsaturated fatty acids (oleic acid) will generate a characteristic taste and health connotations to the consumer.
